Begin on land with Jarrod, our resident oyster expert and longtime PEI Oyster Biologist. Jarrod has spent over a decade studying and cultivating oysters across the province and has judged the International Shellfish Festival’s shucking competition. In this hands-on session, you’ll learn the secrets of oyster growth, try your hand at shucking, and savor fresh local oysters prepared three ways, all while gaining insider knowledge that only someone with Jarrod’s depth of experience can provide.
After your oyster adventure, Heather, veterinarian, ecologist, and seasoned guide, will take you on a guided 1.5‑hour kayak journey through PEI’s stunning ocean lagoon. Heather brings years of wildlife and habitat expertise to the paddle, pointing out hidden marshes, birdlife, and ecological treasures you’d never notice on your own. Glide through serene still-water creeks, explore “The Forks,” and paddle past red-winged blackbirds, herons, and maybe even baby ducks, all while learning about the delicate balance of PEI’s ecosystems.

A Guided Oyster & Lagoon Adventure
Discover Prince Edward Island through flavour and water in this two-part immersive experience led by the experts who know it best.
Begin on Land: Oysters 101 at The Hive
Your adventure starts on The Hive patio, where Jarrod — longtime PEI Oyster Biologist — guides you through the fascinating world of oysters in a relaxed, small-group setting.
You’ll learn:

How oysters are grown, harvested, and graded

How “merroir” shapes flavour

Safe and proper shucking techniques
Then comes the hands-on portion. With guided instruction, you’ll learn to shuck your own oysters and gain the confidence to do it again at home.
During the session, you’ll enjoy six premium PEI choice oysters, prepared three different ways, giving you the opportunity to truly compare flavour and preparation styles. There’s no rush — this is a savour, learn, and taste experience.
Then Onto the Water: Lake Explorer Paddle
After your tasting, you’ll meet Heather at the waterfront for a guided paddle on beautiful St. Peter’s Lake.
Following a safety briefing and paddle instruction (perfect for beginners), you’ll launch into calm, ocean-fed lagoon waters for a relaxed 1.5-hour exploration.
Heather — veterinarian, ecologist, and seasoned guide — brings the landscape to life as you paddle through sheltered creeks and estuary channels known as “The Forks.” You’ll learn about tidal influence, local wildlife, and the delicate balance of this brackish ecosystem.
Expect a peaceful pace, frequent wildlife sightings, and plenty of moments to pause and take it all in.

Each Taste & Sea tour is led by both Heather and Jarrod, the owners of Nature Space!
Heather blends science, storytelling, and wild curiosity. You’ll see birds, fish, and landscapes through an entirely new lens — without it ever feeling like a lecture.
Jarrod brings deep marine knowledge, and a calm confidence that makes everyone feel like a natural.
There are lots of tours out there. There are not a lot of experiences like this led by people with this depth of knowledge and passion!

Cancellation Policy
Kayak tours can be canceled 30 days prior to the tour for a full refund of your deposit, or 8-29 days for a full refund minus a $25 cancellation fee. Cancellations made within 7 days of the tour are non-refundable and the entire cost of the tour is billed at that time to your credit card.
With respect to weather, we watch the forecasts closely and will be in communication if anything needs to change based on the weather. We will still go for a paddle in overcast conditions or with light showers/drizzle. If it’s heavy rain or heavy wind, we will cancel the tour. We typically make weather decisions ~24 hours prior to the tour, as the weather can change at the last minute. If we need to cancel due to weather, we will fully refund your tour deposit. If you choose not to attend based on weather that we deem to be safe/reasonable for the tour, you will be billed for the full cost of the tour.
If you do not show up or show up late after the tour has departed, you will be billed for the full value of the tour.
